Spring Celebrations

As we welcome the beauty of spring with its blooming flowers and fresh, warm breezes, we also look to celebrate the many important events that take place during the season: high school and college graduations; wedding events, such as bridal showers, ladies’ teas, wedding receptions; and numerous others, like outdoor picnics, birthday parties and weekend vacations.

These are some of the best times to explore new recipes and highlight springtime’s seasonal ingredients.

Regardless if you are hosting or attending the party, an assortment of small cookies, bars or squares makes a beautiful presentation when accompanied with a fresh bunch of flowers on a simple serving platter. Dessert bars are especially delicious and easy for guests to pick up and nibble during any event. Bars are also a simple way to make a statement using fresh ingredients available during spring.

Lime is a key ingredient in countless springtime recipes for food and drinks. Whether it’s a homemade key lime pie or glass of cold lemonade with a lime wedge, lime is an ingredient that seems to offer a unique, refreshing flavor to many dishes.

The Key Lime and Macadamia Bars is a new approach to the classic lemon bar. Using fresh lime with a macadamia shortbread crust, these bars will stand out in any springtime celebration.

Key Lime and Macadamia Bars

Crust
Crisco® Original No-Stick Cooking Spray

2 cups Martha White® All-Purpose Flour
1/4 cup sugar
1/4 teaspoon salt
1/2 cup butter, melted
1/2 cup finely chopped macadamia nuts

Filling

2 cups sugar
2 tablespoons Martha White® All-Purpose Flour
1 tablespoon grated lime peel, if desired
6 tablespoons fresh lime or key lime juice
6 large eggs, beaten

Toppings

Powdered sugar
Grated lime peel, if desired

Directions

1. Heat oven to 350° F. Spray a 13×9-inch baking pan with no-stick cooking spray. Combine 2 cups flour, 1/4 cup sugar, salt and butter in medium bowl until mixture resembles coarse crumbs. Stir in macadamia nuts. Press mixture into bottom of prepared pan. Bake 20 minutes or until light golden brown.

2. Combine all filling ingredients in separate medium bowl; beat until smooth.

3. Remove partially baked crust from oven. Pour filling over crust. Return to oven; bake an additional 20 to 25 minutes or until filling is set. Cool 30 minutes or until completely cooled. Sprinkle with powdered sugar and grated lime peel, if desired. Cut into squares.
