Turkey Leftovers? Try This …

turkey-paniniDid you roast a huge turkey for Thanksgiving?  Do you like turkey but get just a little tired of  re-runs?  Here’s a great recipe for leftover turkey. I made Panini last night and my daughter said, “I knew you would be making those …Yay!”  Panini works best with a crusty, sturdy bread but you can use any bread you have on hand. Use your imagination and add ingredients to the Panini that you like.

Turkey Panini

You’ll need:

  • cooked turkey
  • crusty bread like foccacia or ciabatta
  • olive oil and butter
  • swiss cheese
  • cranberry relish, not the jello salad kind
  • arugula or baby spinach
  • brown or dijon mustard

For each sandwich spread one slice of bread with mustard. Add a slice of swiss cheese and spread cranberry relish over it. Top with a layer of cooked turkey and a layer of arugula or spinach, finish off with the final slice of bread.

Paint the bread with a mixture of melted butter and olive oil. Grill in a hot skillet or electric grill until golden brown and toasty.  Serve hot.
